What is your ADC sampling frequency. If sampling freq is too much high so that your required value is coming very often, then in this case the relay will on off very fast. you can use sampling technique. sample your input signal (frum adc) with a sample rate twice(or higher) of the maximum signal freq.Store this reading to eeporm or memory card etc....
